		<description>Just one point of clarification.  It is my understanding that you should not in any circumstances cook with flaxseed oil.  Your article recommends cooking with flaxseed oil: &#039;Flaxseed oil – change your cooking medium to flaxseed oil.&#039;

Flaxseed oil must be kept refrigerated and consumed quickly (within about 6 weeks) from the time of opening as it is susceptible to going rancid quickly, and is also susceptible to polemerisation reactions (it reacts with oxygen to &#039;dry out&#039; which can cause it to be flammable in certain circumstances because it undergoes an exothermic reaction).  So it has a short shelf life. 

Also, heating the oil which causes polymerisation reactions means that the oil is converted into substances that are not good for your health.  The oil is chemically &#039;damaged&#039; by heating.  That is why most cooking oils are hydrogenated oils - they can&#039;t be further damaged by heating.  Flaxseed oil is heated or boiled in particular ways to produce &#039;stand oil&#039; - a medium used in artists&#039; oil painting techniques, and other paint binders and wood finish products.

Moreover, flaxseed oil has a low heating point and smokes quite readily at low heat temperatures, also making it unsuitable for cooking - it is not a stable oil.

Essentially, the higher the content of omega-3 fatty acids in any oil, the less suitable it is for cooking, as heating alters the chemical composition and you lose the benefits of the omega-3 fatty acids.
